About the Event

In this workshop, you will learn to:

• Make two types of pasta dough: egg dough + semolina dough (egg free)

• Roll pasta sheets and cut ribbon pasta by hand or using a manual pasta maker

• Make pansotti filling + fill pasta by hand or using a ravioli tablet

• Roll trofie by hand

• Explore the different types of flour and grains that can be used for pasta making

During this workshop you will learn how to make some of the most beloved fresh pasta shapes from Liguria: Trenette (ribbons), Pansotti (filled pasta) and Trofie (short  pasta shape).

We will make two types of pasta dough from scratch: an egg enriched dough, which can be used to make any type of ribbon and filled pasta, and a semolina (egg free) dough, which is ideal to make short pasta shapes. We'll then roll the dough to achieve the perfect sheet thickness for different applications and  cut Trenette either by hand or using a manual pasta machine.

We will then move on to make Pansotti by preparing the filling and making the ravioli by hand, and finally you will make Trofie, a short, twisted pasta shape.

We will talk about the best way to serve these delicious pasta shapes, with a demonstration of how to prepare two traditional sauces from Liguria: basil pesto and walnut sauce. At the end of this workshop you will have the necessary skills to make fresh pasta at home like a pro, with plenty of tips on how to cook it, printed notes with recipes and the techniques explored during the lesson. 

At the end of the workshop, you will take away your creations + 1  basil pesto & 1 walnut sauce to enjoy at home.

All ingredients and packging for taking pasta home will be provided.
